Spicy Pineapple Margarita

Thank GOD it's Friday !!! My very first thought when I woke up this morning and I'm sure the sentiments might be bang on for many of you lovely people. There's something special about fridays:) ........ This week had been pretty tiring and almost draining for me cause apart from the regular routine, I was also going through some severe cough/fever and my "abs" were put on extra crunch exercise ;) I mean don't you agree.....we end up doing tons of more abs exercise when we have cough THAN we do when we actually exercise exercise...Lolz !!!

And most of my bayarea/westcoast fellows, would have been experiencing forced "home/indoor" activity week due to absolutely needed but too much rains. It feels as if it's raining forever and the holiday spirit is kinda lost somewhere in those heavy gloomy rainy clouds. So anyways, with all so much going on, we definitely deserve something to make us feel good and put us right back where we belong ......To Holiday Spirit...and I'm going to share with you'll a very very simple drink recipe with absolutely stunning looks and heavenly taste. It's what I call "A Glassful of Sunshine" (Don't you think so, just look at it).

It's a mixture of your regular margarita ingredients with pineapple juice, mint and some easy everyday spices. It's a change from the regular sweet drinks that we keep getting everywhere.... It's a a perfect combination of sweet with spice to kick start any occasion.......an easy peasy drink that can be made in no time.....So here we go !

Serves: 4 People
Serving Suggestion: Serve along with appetizer / entree / dessert
Tools:
Large Deep Bowl / Jar – For mixing ingredients
Large Pitcher – For Storing the Margarita
Muddler / Any Spoon/Spatula used for crushing & muddling
Large/Medium Sieve
Serving Glasses

Ingredients:
1 Cup Pineapple Juice – Can use fresh / frozen
½ Cup Lime Juice – Can use fresh or store bought
½ Cup White Tequila – You can increase or decrease the quantity as per choice/preference
½ Cup Triple Sec
¼ Cup of Fresh Mint Leaves
1 Tbsp Rind of Lemon/Lime - Optional
2 Cups Ice

Spices:
1 Tbsp Tabasco Sauce – You can use any pepper based light texture sauce like Tapato/Cholula/Etc
½ Tsp Himalayan Pink Salt(Kala Namak)Available in most Indian stores or local grocery stores
¼ Tsp Crushed Black Pepper

Method: 
  • In a large bowl, add ½ cup ice, mint leaves, lemon rind, spices and muddle gently for a minute using a muddler.
  • Now add all the remaining liquid ingredients in the bowl, stir it evenly using a muddler.
  • Sieve the entire content into a serving Pitcher/Jar.
  • Fill serving glasses half way with ice, pour the margarita and serve chilled.
