Stovetop Spanish Frittata

Hellooooo my lovely readers, I'm back to blogging after a few months of gap......I missed you'll along with my blog and i'm glad to be posting this recipe today :)

Stovetop Spanish Frittata
"Spanish Frittata" are basically Spanish omelette made with eggs, raw potatoes and onions but you may add or reduce ingredients as per choice. The original recipe calls for a thinly sliced raw potatoes which are fried in olive oil till slightly cooked along with onions and then cooked with egg mixture over stove-top and then kept in oven for a flaky crust.

Now I wanted to make a slightly easier and healthier version of this using ingredients as per my choice hence please feel free to experiment and use veggies/meats of your choice.

They are perfect with warm/fresh bread or can be sliced like pizza and served individually.

Here's the recipe enjoy:

Stovetop Spanish Frittata
Serves: 2 People
Serving Suggestion: Serve hot with Warm Bread or Can be eaten as it is.

Tools:
1 Large Non-Stick Pan / Skillet
1 Medium Bowl – For mixing the ingredients
1 Big/Over-size Spatula – For flipping the frittata
Serving Dish / Plate

Ingredients:

2 Large Eggs – If need be, you can also use egg whites
½ Cup Parmesan Cheese – Grated (You can use any cheese as per taste/availability)
4 Tbsp Milk
1 Small Onion – Thinly Chopped
1 Medium Boiled Potato – Thinly Chopped
1 Small Bell Pepper – Any color bell pepper or capsicum can be used
2 Green Chilies - Thinly Chopped (Please add this ingredient as per taste)
½ cup Bread Crumbs – These can be fresh or store bought

½ Tsp Rosemary – You can use dry or fresh rosemary, as per availability (Please add this ingredient as per taste)
½ Tsp Salt – As per taste
½ Tsp Crushed Red Pepper Flakes – As per taste
2 Tbsp Olive Oil - (You may use any flavorless oil)

Method:

  • In a bowl, whisk egg and milk together till they form a frothy consistency (This takes 2min).
  • Add all the above ingredients to this frothy mixture(except oil and breadcrumbs) and mix everything together.
  • Heat a non-stick skillet till its medium hot, pour 1 tbsp oil and reduce the heat to low.
  • Now pour the mixture on the skillet and let it settle for 1min. (You don’t want the skillet to be very hot as it may result in cooking the base too quickly leaving the center of frittata uncooked)
  • Spread the breadcrumbs evenly over the mixture and let it cook for 2min on medium.
  • Now swirl the skillet to check if frittata is cooked (The egg mixture would have become thicker and look almost cooked)
  • Using the spatula, flip the frittata carefully, add 1tbsp of oil and let it cook on the other side for 2-3min. (This side has breadcrumbs hence it will take slightly longer to cook and create the crust)
  •  After 3mins, switch off the heat (Check on both side’s to see if the frittata is evenly cooked. Every stovetop is different hence it may take slightly more/less to cook hence always keep an eye while making this dish)
  • Now transfer to a serving dish and serve hot.
