Instant Idli Dhokla - Instant Steamed Semolina Snack

Whenever we think of "Instant Snack" something extremely oily/sugary/salty/fried comes to our mind. But here's an instant snack which is healthy, light, quick and equally tasty. It can also me made a day before and served later.

Serves: 4
Serving Suggestion: Serve cold as appetizer or small meal

Tools:
Idlee Maker*
1 Large Bowl – To mix ingredients
1 Small Pan – For tempering
1 Serving plate/dish

Ingredients:
1 Cup Sooji / Rava / Semolina – I’m taking fine sooji
½ Cup Plain Yogurt
2 Tbsp Gram Flour (Besan)
½ Tsp Turmeric (Haldi)
1 Tsp Salt
2 Pinch Asafetida (Hing)
1 Tsp Eno (MUST) – Available at any Indian grocery store

For Idlee Maker:
1 Cup Water

Tempering:
2 Tbsp Oil – Use any non-flavored oil
5-6 Big Green Chilies
1 Tsp Salt
1 Tbsp Coconut Powder
½ Tbsp Mustard Seed (Rae)
1 Tsp Sugar
¼ Tsp Asafetida (Hing)
2-3 Tsp Lemon Juice – Fresh or store bought

Method:
In a large bowl, mix all the ingredients except Eno and keep leave outside to ferment for 5-7min. (The batter should resemble a pancake batter)
Oil the idli maker dish/bowls.
Now add Eno in the fermented mixture and ladle each idli dish with fermented mixture.
Add 1 cup water in the Idli maker main pot and put the idli dish inside, steam as per instructions.(I steamed for 7min).
In the meanwhile, heat oil in the small pan, add mustard seed, hing, salt, sugar, lemon juice and green chilies. Once the chilies are little tender, switch off the heat.
Once the idli Dhokla are steamed, put them on serving plate, spread the tempering mixture evenly on it.
Sprinkle with coconut oil and refrigerate for few minutes.
Serve cold.

* If you don't have an Idli maker, use any steaming pot making sure it has a seperate dish to steam batter.
