Breakfast is a very essential and important part of our daily food habits/routine and many of us like me used to or still skip this :)
I don't know WHY??? But many of us do.....maybe it's due to lack of time, diet or any other reason. 
When we are young, to skip breakfast doesn't seems to be such a big deal (as we think) but as we grow older,we experience lack or energy, restlessness, headaches, over-eating specially at lunch n much more. This all happens becoz of missing "BREAKFAST". I mean just imagine, the last meal(of the day) we had was dinner, then we slept for 7-8hrs(we didnt consume any food during the sleep), we skip breakfast and straight away have lunch. So our body is literally without food for more than 10-12hrs....To some it may not be a BIG DEAL but it's a disaster for our body n metabolism.
So after skipping breakfast for almost 10-11yrs in my life, I finally started having it regularly and it did made a hell lot of a difference.I feel much more attentive, energized, full and happy :)
I know it's not easy to start having it daily but then we can atleast try to have it 3-4times a week.
So here's a healthy, simple yet delicious breakfast pancakes recipe, hope you enjoy it !!!

Serves: 2
Serving Suggestion: Serve hot for breakfast along with fresh fruits or juice.

Tools:
Pancake Process
1 Medium nonstick pan
1 medium bowl
1 Whisk
1 Medium Ladle – To pour the batter

Ingredients:
2 Large Eggs
1 Large Boiled Potato - Grated
¼ Cup Milk
3 Tbsp Warm Water
2 Tbsp Cornstarch
1 Tbsp Whole Wheat Flour – You may use any flour as per choice
1 Tsp Salt
2 Tsp Crushed Red Peppers - Optional
1 Tbsp Olive Oil – For making pancakes

Method:
  1. In a medium bowl, whisk 2 eggs till frothy.
  2. Add milk, water, cornstarch, flour, salt and whisk everything to a smooth batter (1-2min). Pic1
  3. Heat the nonstick pan on high, add 1Tbsp oil and reduce heat to medium after1min.
  4. Pour 1 ladle of the mixture to the heated pan, reduce the heat to low (If necessary or pancake starts to burn) and sprinkle some red peppers. Pic 2
  5. Cook for 1min (OR till the side becomes golden brown) and flip to the other side. Continue cooking the other side till golden brown. Pic 3
  6. Serve Hot along with fresh juice/fruit.
