Cinco De Mayo, a day to celebrate Mexican culture and heritage is just around the corner (May 5th) and it's been celebrated in California(USA - because of the large Mexican-American population) since 1863 with parties, parades, mariachi music, bbq and lots of Mexican food.
Mexican food is one of my favorite comfort food - who doesn't love lemony-cheesy food however I do try to reduce the use of cheese and other carbs in it.
To add to the celebrations, I wanted to share my "5 Minutes Mexican Breakfast Bowl" recipe which is not only easy to make but packed with some essential nutrients.
The recipe is a mix of avocado, boiled eggs, sweet bell-peppers, Mexican cheese, lots of lemon juice with couple of more ingredients and just plain and simple chop, mix and serve. It's a perfect breakfast bowl packed with nutrients and ready in 5minutes.
The ingredients in this recipe except avocado can be chopped 2-3days before and refrigerated in bowls or ziplocks. The day you decide to make this recipe, just chop avocado and mix all the pre-chopped recipes and serve fresh.

Minutes Mexican Breakfast Bowl
Serves: 4 People
Serving Suggestion: Serve with Fresh
Juice
Tools:
Large
Bowl – For mixing the ingredients
together.
Serving Dish
Ingredients:
3 Large Avocado – Cut into bite
size pieces
4 Boiled Eggs – Peeled and Cut into bite size pieces
6 Mini Sweet Bell Peppers - Cut into
bite size pieces
6 Cherry Tomatoes - Cut into bite
size pieces
¼ Cup Chopped Peanuts – Crushed
(OPTIONAL)
4 Tbsp Grated Mexican Cheese Mix – You
may use any cheese as per choice
½ Large Jalapeno – Deseeded and
Cut into bite size pieces
3 Tbsp Lemon Juice
2-3 Sprigs of Cilantro – For Decoration
Seasoning:
¼ Tsp Black Pepper Powder
¼ Tsp Salt
Method:
- In a large bowl, add bell peppers, tomatoes, peanuts, lemon juice and mix evenly.
- Now add chopped avocado, eggs, seasoning and mix everything gently (avoid crumbling boiled eggs)
- Transfer in serving dish, sprinkle with cheese and decorate with cilantro.
- Serve with fresh juice.
