Here come's Diwali (The Hindu festival of light) and the first thing that pops up in our mind is firecracker
and sweets. Although, I dont think any Indian festival is devoid of sweets but Diwali almost take's the upper-hand in sweet consumptions.
To start our "Diwali Celebrations", here's an easy recipe for "Kacha Golla" which is a very famous sweet in Kolkata (West Bengal - India) but because of it's popularity, it's available in many other Indian states.
It's one of those rare sweet which has just the right amount of sweetness and because of it's light simple ingredients, it almost melts in your mouth. Which is why it's easily liked by kid's & adults.

* Although they taste best if served when it's made however sometimes they are so soft, that they might break. Hence I kept them in fridge for 2hrs before serving.

** This is also a low calorie sweet.

Kacha Golla
Serves: 12 Pieces
Serving Suggestion: Serve fresh at room temperature or cold.

Tools:
1 Large Bowl – To mix all the ingredients
1 Medium Serving Dish
10-12 Cupcake Liner

Ingredients: 
1 Cup Fresh Homemade Paneer/Chana/CottageCheesePlease make sure that all excess water from paneer/chana is taken out.
5 Tbsp Sugar – I’m using fine sugar
½ Tsp Cardamom Powder
1 Tsp Rose Water - Optional
2 Tbsp Chopped Almonds for decoration - Optional

Method:

            2. As mentioned above, please do make sure that the paneer/chana doesn’t have any water left in it. You may use cheese-cloth to remove excess water from chana. 
  1. Place fresh paneer/chana in a large bowl and knead by hand or old style stone grinder for 10-15min.(We don’t want to use a  food processor to knead this as  it will result in a very loose runny paste).
  2. Once we attain the smooth, non-grainy dough, add rose water, cardamom powder and sugar.
  3. Mix well and knead the dough for another 3-4mins.
  4. Now, the dough consistency will be very light and smooth. Divide the entire dough into 11-12 equal portions.
  5. Form into round balls (making sure there are no cracks or lines) and place into cupcake liner.
  6. Decorate each kacha golla with crushed almonds.
  7. Serve fresh or refrigerate for 3-4hrs and serve cold.
