Not your regular Yellow Dal(Lentil Curry)

Yellow Dal (Lentil Curry)
Okay, I have this questions for all those who read this post, growing up how many of us really liked to eat "Dal"(lentil) ??? Not me atleast, I never liked Dal (Lentil) till I was 5-7yrs, maybe because it just looked "BLAH". But my mom cooked this dal one day which smelled really good and looked interesting enough to try :)
To her relief, I really liked it and when asked what Dal it is, she said "Not your regular Dal" , so from that day I've been calling it the same (I'm sure many of you may have a different name for it). During the course of time I started eating most of the Dal's in many preparation, but this one holds a special place. It's very easy to make as this recipe requires just 1 pot for cooking and because of the use of vegetables, it curbs hunger for a long time (since it's whole grain)

Serves: 4
Serving Suggestion: Can be served with Roti’s or Rice

Tools:
1 Medium Pressure Cooker – You can also use a crockpot OR Large Pot for the same.

Ingredients:
Lentil Curry½ Cup Yellow Lentil (Moong Dal)
½ Cup Pigeon Pea (Arhar Dal)
½ Cup Onion – Thinly sliced
¼ Cup Tomato – Thinly Sliced
½ Cup Spinach
1 Tbsp Green Chilies - Chopped
1 Tbsp Oil (Any non-flavored oil)
1 Tsp Clarified Butter (Ghee)
1½  Cup Water

Indian Spice Mix:
1 Black Cardamom – Crushed
2 Cloves
¼ Stick Cinnamon
1 Tsp Cumin Seed
¼ Tsp Asafetida
Salt – As per taste

Method:
  1. Heat the pressure cooker over medium heat, add oil and butter. Add Indian Spice Mix and sauté for ½ min.
  2. Add Onion and sauté for 2min (Till onions are golden in color). Now add tomato and sauté for 2min.
  3. Reduce the flames to lowest and add Spinach and sauté for another 2min, add both the lentils (Dal) and sauté for 2 more min. (Pic 2)
  4. Now add green chilies and water and pressure cook on high till you hear 3-4 whistles and then switch off the heat.
  5. Wait for 2-3min for the steam in the pressure cooker to reduce completely and Serve Hot.
