Masala Peanuts

"Masala Peanuts" are hands down most popular snack in India. It's something that's available in your roadside street store or hotels.
It's the fried texture with the right spice that makes it a default snack with any drinks.

Masala Peanuts / Nutcracker

Serves: 3
Serving Suggestion: This can be served as an appetizer with drinks/tea OR can be consumed as is. 

Tools:
1 Medium Bowl - For mixing Ingredients
1 Medium non-stick wok/pot - For Deep Frying

Ingredients:
1½ Cup Raw Peanuts – Roasted
1 Cup Gram Flour – (Besan)
¼ Cup Water
½ Cup Oil (Any flavorless oil will work) – For Deep Frying
1 Tsp Baking Powder/Baking Soda

Seasoning or Spices:
1 Tsp Turmeric – (Haldi)
1 Tbsp Mango Powder (Amchur Powder)     
1 Tbsp Red Chili Powder
Salt – As per taste
1 Tbsp Chat Masala - Optional

Method:

  • In a medium bowl, mix peanuts, gram flour, turmeric, baking powder, mango powder, red chili powder, salt and add enough water to make a very thick (clingy) smooth paste. (As per pic above)
  • Heat oil in a non-stick wok on high, once the oil is heated, reduce the heat to lowest.
  • Drop 1 peanut (mixture) at a time, making sure they don’t clump/cling together. Add as many fits the wok and are easily stirred.
  • Keep frying the peanuts at low heat till they become slightly brown (Takes 3-4 min/batch).
  • Remove the fried peanuts to a soaking paper napkin and cool completely before storing in an air tight container.
  • This can be served Hot OR Cold as per choice.
