Khandvi - Indian Gram Flour Snack
'Khandvi' is a lightly flavored rolled-up savory snacks from the western region of India. This region is particularly famous for snacks/ food items made from "Gram Flour or Corn Flour"
It's a mix of flour with yogurt and spices, rolled-up and then tempered using mustard seeds, sugar and some peppers to make it sweet and spicy.

Serves: 2
Serving Suggestion: Serve Fresh OR cold


Tools:
1 Large Microwavable Bowl
Hand Blender OR Electric Mixer
5 Large Aluminum Sheets – Cut into rectangle    (1 ½ Ft)  
1 Small nonstick – For Tempering (Indian Name – Tadka)
1 Large Serving Dish/Plate

Ingredients:
Process of Rolling the Dough
For The Paste 
1 Cup Gram Flour – (Besan)
1 Cup Yogurt
1 Cup Water – Room Temperature
1/8 Turmeric – (Haldi)
Pinch of Asafoetida – (Hing)
Salt – As per taste

For Tempering:
3 Tsp Oil – Of your choice
1½  Tsp Mustard Seeds – (Sarson Dana)
Pinch of Asafoetida - (Hing)
2 Big Green Chilies – Chopped into big round pieces
2 Tbsp Coconut – Grated - Fresh taste best
2 Tbsp Carrot – Grated 

Method:
Prep Work: Lay the aluminum sheets on the counter.
  1. In a large microwavable bowl, mix Besan, Yogurt, Water, Turmeric Powder, Asafoetida and salt. Mix into a smooth paste and microwave for 1½  min (uncovered).
  2. Remove from microwave and mix again to remove any lumps and microwave for another 1½  min(uncovered).
  3. Remove from microwave, mix any lumps and microwave for final 1½ min.
  4. Remove and churn in hand blender to mix any lumps (It should be a thick paste like consistency).
  5. Now spoon batter along one edge of the foil with a flat spatula and gently pull the batter down along the foil (spreading it thin). Leave for 5 minutes to solidify a little. (As per Picture Above)
  6. Now make long strips (1 to 1 1/2 inch) with a knife on the paste.
  7. Gently lift the edge and roll the strip into a tight roll (As per Picture Above). Make the rolls big OR small as per choice. 
  8. Repeat steps 5,6,7 till all the paste is finished and the rolls are done.
  9. In a small nonstick, heat oil and add mustard seeds. Once they start to pop, add asafetida, green chilies and stir for 1-2 min & keep aside.
  10. Now place all the rolls/khandvi on to the serving dish and pour the green chilies mixture, sprinkle with coconut and carrot and serve.
