Carrot Pudding - Gajar ka Halwa


It's one of the very famous and made sweets in India. Easy, delicious and pleases all age group.
Serves: 6
Serving Suggestion: Can be served Hot or Cold as is or can be served with Vanilla Ice-Cream


Tools:
1 Big nonstick/pot for boiling milk.
1 Huge nonstick/pot for cooking carrots


 Ingredients:
2 cups shredded carrots – (shredded at home or store bought)
2 cups milk – (1 cup full fat + 1 cup 1%)
1/4 cup white sugar – (you can substitute with brown sugar or sweetener)
1/2 tsp cardamom powder + 2 whole cardamom
3 tbsp unsalted butter/ghee
9 Almonds (chopped/slivered) – Optional (To decorate)
2 tbsp raisins – Optional (To decorate)
2 tbsp condensed milk – Optional (To decorate)


Method:
  1. Boil milk on a medium heat in a non-stick pan, keep stirring (to prevent milk from burning/scalding). Reduced to a slightly thick consistency. Keep aside and cool.
  2. Melt butter/ghee in a huge pan on medium heat.
  3. Add shredded carrots and stir-fry for about seven to eight minutes or till carrots become tender and slightly orange-pink in color.
  4. Add the already reduced/thick milk and cook on a medium heat until the milk is absorbed (8-10 min) and the Halwa is almost ready now.
  5. Add sugar, raisins and cardamom powder & stir for another three to four minutes until the halwa starts to leave the sides of pot.
  6. Cool Halwa for 1-2 min and add 2 tbsp of condensed milk.
  7. Decorate with almonds or Cardamom
